Fish 🐟 Tacos 🌮 last night 😍 These were SOOOO tasty and flavorful. I threw these together relatively quickly! Here’s the recipe: • first, you chop up ½ red onion and put it into a container with vinegar to pickle the onion (topping). You were also supposed to add sugar but I didn’t have any. This would probably help! They turned out great anyway. Let it marinate for at least 1 hour, but longer is better. Like, overnight. • get out all your ingredients and equipment and place on the counter! This is so helpful when cooking to make things easier to find and grab. • throw together some red cabbage (sliced), green cabbage (sliced), and shredded carrots to make the “slaw,” soak in lime juice, let sit until you’re ready. • take a bowl with 2 eggs and another bowl with bread crumbs, I used Panko garlic 🧄 • dip 3 tilapia fish into the egg and then the bread crumbs. Place in the air fryer at 380 (375 if you can) for 10-12 mins. • heat up the comal (tortilla warmer, basically, you could use a pan) and heat several corn tortillas • mix mayo + chipotle sauce (our friend @vbzvbn
made us a chipotle sauce previously that we used!) • assemble and enjoy! I felt a NOTICEABLE difference in my brain functioning/ability to focus after we ate these. I was able to really focus on my reading and not get distracted. Fish is great for your brain and joints!
